La iniciativa, impulsada por el Cabildo de La Palma y la Universidad de La Laguna (ULL), estuvo coordinada por la C\u00e1tedra de Agroturismo y Enoturismo de Canarias del Instituto Canario de Calidad Agroalimentaria (ICCA) y de la Universidad de La Laguna.<\/p>\n\n\n\n<p>El curso combin\u00f3 dos \u00e1mbitos clave para el desarrollo del sector vitivin\u00edcola actual: por un lado, el an\u00e1lisis sensorial deductivo orientado a la evaluaci\u00f3n t\u00e9cnica de los vinos; y por otro, la introducci\u00f3n a la viticultura regenerativa como modelo de manejo sostenible del vi\u00f1edo. La formaci\u00f3n cont\u00f3 con la participaci\u00f3n del investigador brasile\u00f1o Leonardo Cury da Silva, referente en pr\u00e1cticas regenerativas en Am\u00e9rica Latina, junto a Jes\u00fas Enrique de las Heras Roger y Gabriel Santos Garc\u00eda.<\/p>\n\n\n\n<p>Como parte integral del programa, los alumnos participaron en una pr\u00e1ctica en campo realizada en las instalaciones y vi\u00f1edos de Bodegas Acer\u00f3. Esta actividad les permiti\u00f3 aplicar directamente los conocimientos adquiridos durante el curso, interactuando con t\u00e9cnicas reales de cultivo y observando el comportamiento del vi\u00f1edo en un entorno operativo. La sesi\u00f3n reforz\u00f3 la comprensi\u00f3n de aspectos como el manejo de suelos, la cobertura vegetal y la interpretaci\u00f3n sensorial de uvas y vinos vinculada al terroir.<\/p>\n\n\n\n<p>Durante su intervenci\u00f3n, Cury comparti\u00f3 experiencias de regiones brasile\u00f1as y zonas tropicales de altitud, donde la viticultura regenerativa se ha consolidado como una herramienta decisiva para combatir la erosi\u00f3n, recuperar materia org\u00e1nica y mejorar la resiliencia del vi\u00f1edo. El investigador subray\u00f3 que Canarias enfrenta desaf\u00edos similares debido a la erosi\u00f3n y a la fragilidad de sus suelos volc\u00e1nicos, lo que convierte la regeneraci\u00f3n en un eje estrat\u00e9gico para el futuro del sector. Se\u00f1al\u00f3 adem\u00e1s que modelos aplicados en Brasil y Per\u00fa han demostrado que un suelo vivo contribuye a vinos m\u00e1s complejos y expresivos, plenamente alineados con los m\u00e9todos del an\u00e1lisis sensorial deductivo.<\/p>\n\n\n\n<p>El curso permiti\u00f3 a los participantes desarrollar habilidades para identificar propiedades sensoriales como la acidez, el dulzor, la textura, la astringencia o la finura, conectando estas caracter\u00edsticas con el origen y el proceso de elaboraci\u00f3n del vino. Paralelamente, se abordaron pr\u00e1cticas regenerativas como la m\u00ednima labranza, la gesti\u00f3n de cubiertas vegetales y la optimizaci\u00f3n del agua en suelos volc\u00e1nicos, con el objetivo de favorecer ecosistemas m\u00e1s saludables y mejorar la calidad de la uva.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1 is-layout-flex
